DEPARTMENT OF DOMESTIC SCIENCE. MISS MOnTON, Oirector. The work in this department covers S\1ch subjects as: Dietetics, the needs of the body and the kinds of foods that can best supply these needs, including a careful study and preparation of menus that will best give the desired results; the selection and economic uses of food, the principles of markctiug, domestic storage, and the planning of meals to prevent waste, give \·ariety and regulate the cost; the care of the kitchen and its appointments; the general principles of cookery, boiling, steaming, stewing, baking, and broil– ing; demonstration and praetice of these principles iu the cooking of vegetables, eggs, cheese, soups, meats, biscuits, bread, pastry, cake, pudcliugs and sauces, salad and salad dressings, and llesserb of all kiuds; invalid cookery; serving of meals. The department of Domestic Science is lo~ated in the basement of the library building. ELECTIVE DOMESTIC SCIENCE. Elective work in domestic science to the amount of eight credits will be counted towards the llegrcc of Bachelor of Arts. One lesson a week for one semester constitutes the work required for one credit. Students electiug domestic s<:ience must pay the usual fees for lessous in domestic scif'nce iu addition to their col• legiate tuition fees. RATES OF TUITION. The rate of tuition in the Department of Domestic Science is three dollars per semester for one lesson a week. 'l'his fee is pay– able at the beginning of the semester.
